1. Overview of saccharides

Saccharide is the general name of polyhydroxyketone or polyhydroxyaldehyde. The molecular formula of Saccharide is (CH2O) n or CN (H2O) n, However, some Saccharide do not conform to the formula, such as rhamnose (C6H12O5), Deoxyribose(C5H10O4). Because of  the special chemical structure of Saccharide, they can react with other substances to produce carbohydrate derivatives. For example, alkyl glycosides synthesized from glucose and fatty alcohol, It can also replace aldehyde group or hydroxyl group with other groups to form new compounds, such as azido, thiosaccharide, glycosamine, glycolipid, etc, which play an increasingly important role in food, chemical industry, medicine and other fields.

2. Application of Saccharide and derivatives

2.1: Free sugar: free sugar mainly includes monosaccharide, disaccharide, polysaccharide and glycoalcohol, such as cellulose and chitin in polysaccharide, which can be used as the cell wall of animal exoskeleton and plant cells, such as mannitol in glycoalcohol, and is often used as powder dispersant during the manufacturing of gum sugar, to avoid binding with manufacturing equipment and packaging machinery, and also as a component of plasticizing system, so as to keep its softness It can also be used as diluent or filling of sugar slice and chocolate flavor coating of ice cream and candy. It is also a good low calorie sweetener, gum sugar and candy anti viscosity agent, nutritional supplement and tissue improver, humectant.

2.2Thiosaccharide: a thiosaccharide is a Saccharide in which the oxygen atoms are replaced by the sulfur atoms. Such as thioribose or deoxythioribose. Thioribose and deoxythioribose have similar structure with ribose. They can combine with a variety of bases to form thionucleoside. They have strong biological activity and are widely used in anticancer, antibacterial, antiviral and other fields.

2.3Glycosides: glycosides are compounds with acetal (ketone) structure formed by the dehydration and condensation of carbohydrates by the hydroxyl group on the carbon atom of the end group of sugar and the hydrogen atom on another non-sugar substance. The common glycosides are alkyl glycosides,

aminophenyl glycosides and so on. Alkyl glucoside, as a new green surfactant, has the advantages of low surface tension, strong detergency, rich foam, fine and stable, no irritation to skin, no toxicity, good biodegradability and no pollution to the environment. It is widely used in daily chemicals, textile auxiliaries, pesticide auxiliaries and other fields.

2.4: Glycolipids: glycolipids refer to lipid compounds containing glycosyl groups. In recent years, many new glycolipids have been synthesized or extracted from natural substances. Glycolipids are widely used in medicine, cosmetics and food. Glycolipids are also widely used in the pharmaceutical industry. The quality and quantity of glycolipids have a great impact on the formation of tumors, which can enhance the immune function of the body and contain platelets Active factor antagonist (PAF) can prevent arteriosclerosis.

2.5Enzyme substrate: in clinical detection, many indicators are related to glycosidase, such as fucosidase, n-acetylaminoglycosidase, sialidosidase, etc. Substrate is an integral part of glycosidase detection. The general structure is glycoside and a chromogenic group. The reaction principle is that the substrate of glycosidase is hydrolyzed to sugar and free chromogenic group under the action of corresponding glycosidase. The concentration of glycosidase in the sample was calculated by the absorbance change of chromophore in the characteristic absorption peak. 2.6Membrane protein detergent

Membrane proteins have important physiological functions, including material transfer, energy conversion and signal transduction. The research of membrane proteins plays an important role in the development of biomedical field. Currently, about half of the drugs approved by FDA are targeted by membrane proteins. The hydrophobicity of membrane protein determines that it must rely on a suitable detergent to be stable in aqueous solution. Glycoside detergents are mild detergents with a carbohydrate (usually glucose or maltose) as the polar head and an alkyl chain of 7-14 carbon lengths as the polar tail. Because the protein protein bond is not separated, the membrane protein can retain its natural structure and function. For example, n-dodecyl-β-d-maltoside (DDM) is often used to extract and dissolve proteins, stabilize enzyme activity, activate enzyme and study membrane. It can effectively separate hydrophobic membrane proteins that retain activity, which is better than chaps (3-cycloethylamine-1-propanesulfonic acid) or NP-40 (nonionic detergent).
