ε-Polylysine is metabolite of white streptomycete. ε-Polylysine has significant inhibition on both Gram positive bacteria and negative bacteria, fungi, viruses, etc., it also has good effects on the inhibitory of Gram-negative bacteria Escherichia coli and Salmonella which is difficult to inhibit by other preservatives.
