Bromelein

Bromelain is a set of sulfhydryl proteolytic enzyme which is extracted from pineapple and refined through bio-engineering techniques, it is also known as stem bromelain. The main component of Bromelain is a kind of protease containing sulfydryl, while containing peroxidase, acid phosphatase, some kind of protein inhibitors and organic active calcium, which active center is sulfydryl (-SH). It can perform various protein hydrolysis and biochemical reactions, it can be widely used in food, pharmaceutical and biological industries.

【Using condition】：

Optimum temperature: 45 ℃

Optimum pH value: 6.8

The optimal additive amount of enzyme must follow specific production circumstances.

【Storage】：

Suggest to store in cool ,dark and dry environment.

If it is stored for too long time or the storage condition is unfavorable, the activity of enzyme will be reduced in some degree; If the temperature and humidity is too high, the amount should be increased during application.

2.
