Gelatin is made from boiled animal bones, skin and tendons. The main composition of gelatin is mixture of polypeptide which is composed of same amino acid and molecular weight distribution is wide, molecular weight is generally from tens of thousands to hundreds of thousands. Gelatin has both acidic and alkaline characteristic, and it is a kind of amphoteric substance.
