    Agarose is linear polymer, its basic structure is a long chain alternatively connected by 1,3 linked β -D- galactose and 1,4 link 3,6- ether -L- galactose. Agar pectin is a heterogenous mixture composed of many smaller molecules. Agarose is generally dissolved in water when heated up to 90, good semi solid gel will be formed when temperature drops to 35-40 , this character is the main feature and basic for its wide uses. Agarose gel properties are usually expressed by gel strength.
