Chymotrypsin is endopeptidase extracted and isolated from the fresh pancreas of cattle (pig). It’s white or light yellow crystalline or amorphous powder, easily soluble in water and insoluble in organic solvents. Its relative molecular mass is24000, and the optimum PH value is 8 ~ 9. It is stable in dry state and rapidly loses activity in aqueous solution, most stable in an aqueous solution of PH3 ~ 4. When it is applied to protein, it will hydrolyze the peptide bond formed by L-tyrosine and L-phenylalanine in priority.
The product is purified by multiple crystallization and chromatography and further derived by taking chromatography and ultrafiltration technology.
