Introduction to Sodium Caseinate 
Casein sodium salt (CAS#9005-46-3) is the sodium derivative of casein, derived from the latter. Casein, predominantly found in animal milk, especially in cow's milk, constitutes approximately 80% of the protein content. It forms a soluble calcium phosphate complex with a micellar structure and is classified into four types: α-, β-, γ-, and κ-casein.

Physical and Chemical Properties
Sodium caseinate is a white or milky-white powder with no distinct odor, tasteless or possessing a mild specific aroma and taste. It easily dissolves or disperses in water, with a pH value ranging from 6.0 to 7.5. When its aqueous solution encounters acidity, casein precipitates. Notably, there is no agglomeration when heated at 94°C for 10 seconds or 121°C for 5 seconds.
 
 
Application in Colloidal Gold Immunochromatography
Interference with Electrostatic Interactions: Sodium caseinate, functioning as a protein, interferes with electrostatic interactions. This unique property allows it to bind to non-specific sites in colloidal gold immunochromatography, effectively eliminating false positives.
 
Dispersion and Colloidal Stability: Sodium caseinate, when dispersed in a solution, exerts a repulsive effect on the gold-labeled complex. This repulsion increases the degree of dispersion, acting as a framework for dispersing colloidal gold particles and thereby maintaining colloidal stability in the immunochromatography process.
 
 
Other Applications of Sodium Caseinate:
Nutritional Studies on Litopenaeus vannamei Larval Feeds: Casein-based feeds, incorporating sodium caseinate, were formulated to investigate the nutritional effects of vitamin E on Litopenaeus vannamei larval feeds.

Enzyme Activity Determination:  The activity of three enzyme solutions containing trypsin, chymotrypsin, and peptidase was assessed, likely utilizing sodium caseinate in relevant assays.
